Ingredients: for approx. 12 pieces
- 2 large eggs (approx. 115g)
- 250 g low-fat quark
- 60 g Ruut cassava flour
- 40 g ground almonds
- 1 tsp baking powder
- Juice of 1/2 lemon
- 1 tbsp maple syrup
- 2 apples, coarsely grated (approx. 220 g grated)
- Raisins, optional

PREPARATION:
Tip :) Use kitchen scales to weigh the ingredients, such as the flour, for our recipe.
- Preheat the oven to 180°C (hot air).
- Place all the ingredients, except the apples, in a bowl and whisk until you have a smooth batter.
- Coarsely grate the apples and fold them into the batter. If you like, you can also add a few raisins to the batter for extra sweetness.
- Line a baking dish (approx. 20 x 20 cm) with parchment paper and pour in the batter.
- Bake the cake for 35 minutes. Leave to cool in the baking dish.
Tip:
The cake will stay fresh for a few days, but should be stored in the refrigerator.
Whether for breakfast or as a healthy snack, it always tastes wonderful and provides you with a good portion of protein.
