Delicious recipe from: Johanna from www.glutenfreierezeptwelt.de

Ingredients: for approx. 12 pieces

  • 2 large eggs (approx. 115g)
  • 250 g low-fat quark
  • 60 g Ruut cassava flour
  • 40 g ground almonds
  • 1 tsp baking powder
  • Juice of 1/2 lemon
  • 1 tbsp maple syrup
  • 2 apples, coarsely grated (approx. 220 g grated)
  • Raisins, optional

PREPARATION:

Tip :) Use kitchen scales to weigh the ingredients, such as the flour, for our recipe.

  1. Preheat the oven to 180°C (hot air).
  2. Place all the ingredients, except the apples, in a bowl and whisk until you have a smooth batter.
  3. Coarsely grate the apples and fold them into the batter. If you like, you can also add a few raisins to the batter for extra sweetness.
  4. Line a baking dish (approx. 20 x 20 cm) with parchment paper and pour in the batter.
  5. Bake the cake for 35 minutes. Leave to cool in the baking dish.

Tip:

The cake will stay fresh for a few days, but should be stored in the refrigerator.

Whether for breakfast or as a healthy snack, it always tastes wonderful and provides you with a good portion of protein.
