Ingredients: for 12 pancakes
- 1 ripe banana (approx. 115 g)
- 1 large egg
- 200 g chunky cream cheese, vegan optional
- 100 ml oat milk or another plant-based alternative
- 160 g gluten-free baking mix for waffles and pancakes
- 1 tbsp maple syrup
- 20 ml sparkling water

PREPARATION:
Tip :) For this recipe, or when measuring ingredients like flour, use only a kitchen scale.
- Peel the banana and mash it in a bowl.
- Add the egg and stir until smooth.
- Add the remaining ingredients, except for the sparkling water, and whisk until you have a smooth batter.
- Gently fold in the sparkling water.
- Heat a nonstick pan with a little coconut oil and pour 1–2 tbsp of batter into the pan per pancake. Cook for about 2 minutes per side over medium heat until golden brown.
- Serve with a little maple syrup, applesauce, and yogurt, or fruit of your choice.
