Ingredients: approx. 23 pigs
- 100 g Ruut manioc flour
- 45 ground almonds
- 1 tsp baking powder
- 100 g marzipan
- 1 pinch of salt
- 1 egg size M
- 50 g butter
- 15 g freeze-dried strawberries or red food colouring
- chocolate chips/cocoa nibs for the eyes
PREPARATION:
Tip :) Use only kitchen scales for our recipes and for weighing the flour.
- Process the freeze-dried strawberries into a powder in a mortar.
- Put all the ingredients, including the strawberry powder or food colouring, (except for the chocolate drops/cocoa nibs) in a bowl and knead with your hands to form a smooth dough.
- Wrap the gluten-free dough in cling film and place in the refrigerator for about 30 minutes.
- On a floured surface, roll out the dough to about 0.5 cm thick. Use a round cookie cutter or glass to cut out 23 circles. Use a smaller round cookie cutter (see tip!) to cut out 69 small circles.
- Place one small circle on the bottom of each large circle and stick two more small circles on top as ears, so that at least 2/3 of the small circle protrudes.
- Use a toothpick to poke two small holes as nostrils and press two small chocolate drops/cocoa nibs or raisins into each dough as eyes.
- Bake in a preheated oven at 190°C (top and bottom heat) for 8-10 minutes. Leave to cool on the baking tray and enjoy!
Tip:
We used an apple corer here. This is a corer that allows you to cut out just the core, leaving the apple whole.
