Ingredients: for a cake, approx. 24 cm in diameter
For the pears:
- 240 g pears (weighed whole)
- 400 g apples (weighed whole)
- 1 tsp cinnamon
- 1 tsp brown sugar
- Juice of 1/2 lemon
For the batter:
- 3 eggs, size M
- 100 g sugar
- 130 g butter
- 100 ml oat milk
- 130 g Ruut cassava flour
- 100 g ground almonds
- 4 g ground psyllium husks
- 2 tsp baking powder
- 40 g potato starch
- 30 g walnuts, coarsely chopped
For the topping:
- 50 g walnuts, coarsely chopped
- 1 tsp sugar
- 15 g butter

PREPARATION:
Tip :) For this recipe, and especially when measuring ingredients like flour, be sure to use a kitchen scale.
- Peel the pears and apples, remove the cores, and cut them into small pieces. Mix them in a bowl with cinnamon, sugar, and lemon juice, then set aside.
The batter:
- Cream the eggs, sugar, and butter together. Stir in the oat milk.
- Mix the cassava flour, ground almonds, psyllium husk powder, baking powder, and potato starch in a separate bowl.
- Gently fold the dry ingredients into the egg mixture. It’s best to mix well first by hand and then again with a mixer.
- Fold the walnuts into the pear and apple mixture by hand, then pour the batter into a springform pan lined with parchment paper (24 cm diameter).
- For the topping, briefly mix all the ingredients with your fingers, crumble over the cake, and press down slightly.
- Bake the cake in a preheated oven (top and bottom heat) at 200°C for about 55 minutes.
- Let the cake cool in the pan, then dust with powdered sugar before serving.
