Ingredients for the AIP plum and apple crumble
For the filling:
- 2 large tart apples (e.g. Boskoop)
- 400 g plums
- Juice of half a lemon
- 1 tbsp coconut sugar
- 1 tsp cinnamon
- 1 pinch of mace
For the crumble:
- 200 g Ruut cassava flour
- 2 pinches of salt
- 80 ml water
- 90 ml coconut oil, melted
- 50 ml maple syrup
- 1 tsp vanilla extract

How to make a paleo and gluten-free crumble cake
- Wash and core the apples and pit the plums. Then cut them into bite-sized pieces and put everything in your baking dish. Add the juice of half a lemon.
- Add the coconut sugar, cinnamon and mace to the baking dish as well. Mix everything well.
TIP: For the fullest flavour, leave the filling to infuse in the fridge for a few hours. Alternatively, you can also use it straight away.
- Put the cassava flour and the salt in a mixing bowl.
- Stirring constantly, add the water, melted coconut oil, maple syrup and vanilla extract until crumbs form. If necessary, add a little more water.
- Preheat the oven to 200 °C (top and bottom heat).
- Spread the crumble evenly over the filling in the baking dish.
- Bake for 30 minutes.
- The plum and apple crumble tastes best while it is still warm. Bon appétit!
