Gluten-free grain bread with millet | Ruut

Glutenfreies Körnerbrot mit Hirse | Ruut

INGREDIENTS: for a loaf tin, approx. 24 cm x 10 cm x 6 cm

grain mix:

  • 100 g gluten-free rolled oats
  • 50 grams of flaxseed
  • 70 g sunflower seeds
  • 80 g uncooked millet grains *
  • 350ml hot water

Dough

  • 200 g Ruut cassava flour
  • 80 g golden millet flour **
  • 30 Psyllium Husk Powder
  • 1 tsp baking soda
  • 1 1/2 teaspoons salt
  • 15 grams of dry yeast
  • 30 ml apple cider vinegar (or white vinegar)
  • 300 ml of warm water

* instead of millet you can also use 30 g sesame seeds and 50 g whole buckwheat grains.

** Instead of golden millet flour you can also use buckwheat flour.

PREPARATION:

Tip :) Only use a kitchen scale for our recipes and to weigh the flour.

  1. Mix the rolled oats, linseed, sunflower seeds and millet (or sesame and buckwheat) in a baking bowl and add the 350 g of hot water. Mix well and leave to soak for 15 minutes.
  2. Add all other ingredients for the dough and knead well with the dough hook of a hand mixer or the food processor (knead for at least 5 minutes).
  3. Pour the dough into a loaf tin (approx. 24 cm x 10 cm x 6 cm) and let it rise, covered, for 45-60 minutes, depending on the room temperature.
  4. Preheat the oven to 190°C, top and bottom heat and bake the bread for 90 minutes. Take the bread out of the pan and bake for another 10 minutes.
  5. Let the bread cool down completely on a wire rack (at least 4 hours!).

Danke für das tolle Rezept!!! Und danke an Gitta, deren Tipps ich auch gleich beim ersten Backen mit umgesetzt habe. Das Brot ist wirklich super lecker 🤩
Man muss allerdings einiges an (Back-) Zeit mitbringen, und mein Teig ist leider unter der Trockenhefe gar nicht aufgegangen. Wie Katja auch schon fragte, stellt sich die Frage, ob man Alternativen wie z.B. Backpulver nehmen könnte!?!
Und: Die Kruste ist sehr hart. Man sollte das mögen und gute Zähne haben 😉😂

Hallo Ruuth Team,
ich habe am letzten Wochenende das Brot zum ersten Mal gebacken und auch gleich Gitta´s Ratschläge befolgt…es wurde bis heute aufgegessen! Sogar mein Sohn ein Toastbrot Nutella Kind liebt dieses Brot und hat mich darum gebeten das nochmal zu backen. Ich hatte kein Hirsemehl und habe stattdessen Dinkelvollkornmehl benutzt ..sorry und auch die 80 Gramm Hirse mit 40 Gramm Sesam und 40 Gramm Hirse ersetzt. Es ist super fluffig und lecker.
Heute backe ich das Brot mit Buchweizenmehl statt Dinkelvollkorn.. soll ja Paleo sein und ich habe die Hirsekörner gegen Mohnsamen ersetzt.
Eine Frage: ist die Trockenhefe wirklich notwendig? Ich vertrage Hefe nicht so gut. Natron und Essig/Zitrone ersetzte doch ein Backtreibmittel.
Ich werde berichten wie es geworden ist. Auf jeden Fall bin ich begeistert! Danke dafür und Grüße aus Niedersachsen Katja

Es freut uns sehr, dass dir das Brot so gut schmeckt und auch gelingt! Deine Änderungen werden wir auch mal testen, vielleicht wird das Brot ja tatsächlich so noch besser ;) . Danke für die Ideen.

Ich habe das Körnerbrot jetzt öfter gebacken und das Ergebnis wird immer besser durch kleine Verbesserungen.
Ich lasse die eingeweichten Körner mindestens eine Dreiviertelstunde stehen, sodass die gesamte Flüssigkeit aufgesogen ist.
Den fertigen Teig lasse ich im kurz vorgeheizten Ofen ( etwa 7-8 Min 50 Grad) für 1 Std gehen.
Dadurch ist die Restfeuchtigkeit so toll, dass das Brot total locker und 5 Tage frisch bleibt!
Die ersten Brote waren mir zu nass geraten und ich konnte sie nur getoastet essen
Ein super Rezept, dass Brot schmeckt fantastisch.
