Quantity: for 1 cake with a diameter of approx. 26 cm
Ingredients for the dough:
- 110g Ruut cassava flour
- 80 g ground almonds
- 10 g psyllium husk powder
- 90 g cold butter
- 1 large egg yolk
- 70 grams of honey
For covering:
- 4 apples
- 2 pears
- juice of 1/2 lemon
- 1/4 tsp ground vanilla or pulp 1 vanilla bean
- 1 tbsp Ruut cassava flour
- 2 tbsp maple syrup
- 2 tablespoons sliced almonds
PREPARATION:
Tip :) Only use a kitchen scale for our recipes or to weigh the flour.
- Put all the ingredients for the dough in a bowl and knead with your hands to form a smooth dough.
- Form the dough into a ball and wrap it in cling film and put it in the fridge for about 30 minutes.
- Set aside 1/3 of the dough. Crumble the remaining dough into a springform pan and press into a smooth dough, form a border of approx. 2 cm.
- Wash the fruit, peel and cut into thin slices with a slicer.
- In a bowl, mix the slices with the lemon juice, vanilla powder, maple syrup and flour.
- Preheat the oven to 180 degrees.
- Form the reserved dough into 6 thin rolls and place them over the apples to form a lattice.
- Sprinkle with slivers of almonds.
- Bake the cake for 35 minutes.
- Let it cool down and if you like you can add vanilla sauce or vanilla ice cream.
