The number of people who have discovered Paleo as a form of nutrition has increased in recent years - maybe you are one of them. The reason for this decision is the assumption that human beings have not really changed in terms of their genes since the Stone Age and one can therefore assume that the form of nutrition prevailing at that time must still be good today.

Baking Paleo bread - that may sound more complicated to you than it actually is. Because it differs only a little from baking a "classic" bread. The main difference: the ingredients used – especially the flour required. Instead of using cereal flours made from wheat, rye, etc., you can use alternatives made from nuts, roots, and much more when baking Paleo bread. A practical side effect of these flours: the majority of them are gluten-free and therefore also suitable for people with gluten intolerance or celiac disease.

In order for your Paleo bread to be a success, it is advisable that you stick to a recipe in which the ingredients and quantities are listed in detail. Because many flour alternatives have different properties than the classic counterparts made from grain and must therefore be used specifically. The reason for this is as follows: Wheat flour, for example, contains a comparatively large amount of starch and protein, but less fat. In contrast, many flour alternatives (e.g. nut flours) are rich in fats and proteins but low in starch. In order to get an effect similar to that of wheat flour, you should choose a product that comes as close as possible to the gluten-containing alternative in terms of its ingredients. With the Paleo diet, however, the choice (of starchy flours) is quite limited. However, a good alternative is cassava flour . It is currently the gluten-free flour that most closely resembles wheat flour. Therefore, you can substitute it 1:1 in some recipes without the need for additional starch or binders. However, since this is not always the case, we recommend looking for recipes that are labeled gluten-free from the start, for example, as these often fit the Paleo diet requirements as well. Alternatively, you can also use a ready-made baking mix to save work and time.

So it can be said: Paleo nutrition does not automatically mean that you have to do without delicious-tasting bread and fragrant rolls .
