Klappt prima mit dem Maniokmehl, Ergebnis bei der Verwendung im Brot nach Rezept in Mischung mit anderen glutenfreien Mehlen ganz prima. Etwas anderes habe ich damit noch nicht versucht.

Meine Tipps für deine Maniokbrötchen.

ich schmeiss alles in den thermomix, erstmal pürieren, dann teig kneten, dann muss man keine olivenöl aufwärmen oder so. passt super.
Dann mache ich kleine Brötchen (doppelte Menge), wenn abgekühl schneide ich sie auf und friere diese Brötchenhälften ein. Wann immer ich Brot will einfach in den Toaster (einmal defroast, einmal toast modus). Klappt super !!
