Healthy sugar-free protein pancakes – quick & easy using a waffle mix

PREPARATION:

Tip :) For this recipe, or when measuring ingredients like flour, use only a kitchen scale.

  1. Peel the banana and mash it in a bowl.
  2. Add the egg and stir until smooth.
  3. Add the remaining ingredients, except for the sparkling water, and whisk until you have a smooth batter.
  4. Gently fold in the sparkling water.
  5. Heat a nonstick pan with a little coconut oil and pour 1–2 tbsp of batter into the pan per pancake. Cook for about 2 minutes per side over medium heat until golden brown.
  6. Serve with a little maple syrup, applesauce, and yogurt, or fruit of your choice.
