How to bake vegan pear bread
Tip :) For our recipes, and especially for weighing the flour, always use a kitchen scale.
- Peel and clean the pears and cut them into small pieces. Mix them with the lemon juice and cinnamon in a bowl and leave to infuse.
- Mix the raisins with the apple juice in a large mixing bowl.
- Chop the nuts finely and add them to the raisins together with the remaining ingredients. Knead by hand.
- Add the pears and knead them in by hand as well. The dough will be rather crumbly and dry.
- Put the dough into a greased loaf tin and press it down firmly.
- Bake the pear bread in a preheated oven at 190 °C, top and bottom heat, for 55 minutes.
- Let the bread cool completely in the tin before slicing it.
TIP:
- It tastes wonderful just as it is! But you can also spread it with a little butter and/or honey.
- The pear bread keeps for up to a week in the fridge. It becomes nice and moist and tastes better day by day.
