- 1 tsp brown sugar
- Juice of 1/2 lemon

- 130 g butter
- 100 ml oat milk
- 130 g Ruut cassava flour
- 100 g ground almonds
- 4 g psyllium husk powder
- 2 tsp baking powder
- 40 g potato starch
- 30 g walnuts, roughly chopped
For the topping:
- 50 g walnuts, roughly chopped
- 1 tsp sugar
- 15 g butter

PREPARATION:
Tip :) Use kitchen scales to weigh the ingredients, such as the flour, for our recipe.
- Peel the pears and apples, remove the cores, and cut into small pieces. Mix with cinnamon, sugar, and lemon juice in a bowl and set aside.
The dough:
- Cream the eggs, sugar, and butter. Stir in the oat milk.
- Mix the cassava flour, ground almonds, psyllium husk powder, baking powder, and potato starch in a separate bowl.
- Carefully fold the dry ingredients into the egg mixture. It is best to do this by hand first and then mix well again with a mixer.
- Fold in the walnuts, pears, and apples by hand and pour the batter into a springform pan (24 cm diameter) lined with parchment paper.
- For the topping, briefly mix all the ingredients together with your fingers, crumble over the cake and press down lightly.
- Bake the cake in a preheated oven at 200°C (top and bottom heat) for approx. 55 minutes.
- Leave the cake to cool in the tin and sprinkle with icing sugar before serving.
