Simple apple and pear cake with caramelized walnuts, gluten-free

Ingredients: for a cake, approx. 24 cm in diameter

For the pears:

  • 240 g pears (whole weight)
  • 400 g apples (whole weight)
  • 1 tsp cinnamon
  • 1 tsp brown sugar
  • Juice of 1/2 lemon

For the dough:

  • 3 eggs, size M
  • 100 g sugar
  • 130 g butter
  • 100 ml oat milk
  • 130 g Ruut cassava flour
  • 100 g ground almonds
  • 4 g psyllium husk powder
  • 2 tsp baking powder
  • 40 g potato starch
  • 30 g walnuts, roughly chopped

For the topping:

  • 50 g walnuts, roughly chopped
  • 1 tsp sugar
  • 15 g butter

PREPARATION:

Tip :) Use kitchen scales to weigh the ingredients, such as the flour, for our recipe.

  1. Peel the pears and apples, remove the cores, and cut into small pieces. Mix with cinnamon, sugar, and lemon juice in a bowl and set aside.

The dough:

  1. Cream the eggs, sugar, and butter. Stir in the oat milk.
  2. Mix the cassava flour, ground almonds, psyllium husk powder, baking powder, and potato starch in a separate bowl.
  3. Carefully fold the dry ingredients into the egg mixture. It is best to do this by hand first and then mix well again with a mixer.
  4. Fold in the walnuts, pears, and apples by hand and pour the batter into a springform pan (24 cm diameter) lined with parchment paper.
  5. For the topping, briefly mix all the ingredients together with your fingers, crumble over the cake and press down lightly.
  6. Bake the cake in a preheated oven at 200°C (top and bottom heat) for approx. 55 minutes.
  7. Leave the cake to cool in the tin and sprinkle with icing sugar before serving.
