INGREDIENTS: Makes about 10-12 pieces
- 125g softened butter
- 110 grams of sugar
- Finely grated zest of 1/2 lemon
- 1 tbsp lemon juice
- 3 eggs, size L
- 100 ml buttermilk
- 200 g Ruut cassava flour
- 40 g tapioca starch
- 50 g cornstarch
- 1 teaspoon psyllium husk powder
- 1 tsp baking soda
- 2 teaspoons of baking soda
For the icing:
- 150g powdered sugar
- approx. 40-50 ml lemon juice
PREPARATION:
Tip :) Only use a kitchen scale for our recipes and to weigh the flour.
- Cream together the butter and sugar for a few minutes using a hand mixer. Add the lemon zest and juice, then stir in the eggs one at a time. Beat each egg until it is completely incorporated, then add the next one.
- Then stir in the buttermilk.
- Add the flour, psyllium husk powder, baking soda and baking powder and fold in the flour with a spoon. Then mix everything well again with the hand mixer.
- Leave the dough to rest for about 10 minutes so that the flour and psyllium husk powder can absorb some of the liquid.
- Preheat the oven to 180°C, top and bottom heat. Use a spoon to put 10-12 small heaps (depending on how big you want the Americans) on a baking sheet lined with parchment paper. Flatten the piles a little and leave enough space between the individual piles, because the dough will spread but also rise.
- Bake the Americans for 10-12 minutes (do a skewer test!), they should not get dark underneath. Leave to cool on the baking sheet for about 10 minutes and then leave to cool completely on a wire rack.
- Sift the icing sugar and mix with just enough lemon juice to make a creamy, thick icing. Using a knife, spread the icing on the bottom of the Americans. If you like, you can sprinkle sprinkles or Smarties on top.
