Ingredients for the gluten-free sourdough wrap:
- 1 tbsp sourdough
- 4 tablespoons ruut cassava flour
- 12 tbsp rice coconut milk
- 1 tsp ghee
Preparation of the gluten-free wrap from sourdough:
Tip :) Use only a kitchen scale for our recipes or to weigh the flour.
- I started the sourdough with rice flour in the beginning and then continued to feed it with cassava flour. It is recommended to use up the sourdough fairly quickly, it keeps for less time than sourdough containing gluten. Sourdough is so wonderful because it contains live microorganisms & this promotes the growth of good gut bacteria.
- Mix everything well except ghee! The consistency is neither runny nor chewy, it should be a good creamy consistency. Otherwise, add some more rice coconut milk.
- Then heat 1 tsp ghee in a pan until hot & reduce heat to medium. Pour in batter & fry for 2 minutes on both sides. Already done! If it hits small bubbles, this is quite normal, this is due to the sourdough.
