Gluten-free apple and cinnamon compote with crumbles | Ruut

Glutenfreier Apfel-Zimt-Kompott mit Streuseln

Ingredients : for two servings

compote :

  • 1 apple (approx. 200g)
  • 20g cane sugar
  • 100ml of water
  • juice of half a lemon
  • Pinch of cinnamon

cream :

  • 200 ml (vegetable) cream
  • pinch of salt

sprinkles :

  • 25g ground almonds
  • 50g Ruut cassava flour
  • Pinch of vanilla sugar
  • pinch of salt
  • 25g honey or sugar
  • 30g butter (or vegetable butter alternative)


Tip :) Only use a kitchen scale for our recipes and to weigh the flour.

  1. Knead all the ingredients for the crumbles into a homogeneous dough and chill for 30 minutes.
  2. Preheat the oven to 160°C hot air (180° top/bottom heat).
  3. Crumble the dough onto a baking sheet lined with baking paper and bake for about 12 minutes until golden brown. Let cool down.
  4. For the compote, peel the apple, remove the core and cut into pieces. Place in a saucepan with the remaining ingredients and cook over medium heat for about 15 minutes until most of the water has evaporated. Stir occasionally and then let cool.
  5. Whip the cream with a pinch of salt. To do this, it must be well chilled and then refrigerated until use.
  6. Layer the individual ingredients in a dessert glass. First we layered some of the crumbles, then the compote and finally the cream. Scatter some of the crumbles over the cream for decoration.
